La recette d'Elisa : San Valentino fragoloso

Ingredients for the sponge cake (you can also buy ready-made):
- 3 eggs
- 150g sugar
- 1 pinch of salt
- Juice of 1 / 2 lemon
- 100g plain flour
- 100g wheat starch (frumina)
- 1 packet of yeast
Ingredients for the filling:
- 250ml of whipped cream
- 250g strawberries
Ingredients to cover:
- 200g dark chocolate
- 100ml cream (or molk)
- Pavesini or biscuits, strawberry and chocolate chips to decorate

Beat the yolks foam (reserving whites), and gradually add 100g of sugar and the lemon juice and beat until a creamy mass.
Whip the egg whites with the salt hard and then, still beating, add the remaining sugar. Put the egg whites over the yolks beaten, sift over the flour mixed with wheat starch, and finally the yeast. Stir gently around without bumping into the beaten egg yolks. Put the dough into a circle mold opening (diameter 26 cm) buttered and floured and bake for 40-45 minutes at the bottom of the oven preheated to 175 °.
Let the cake cool before proceeding to the filling and sealing.
Meanwhile mount 200ml of cream and cut the strawberries into small pieces. Cut the sponge cake in half and fill with whipped cream and strawberries.
Melt the chocolate with 100ml of cream and cover the entire cake, then decorate with pavesini, strawberries and chocolate chips.
